Light and Healthy Chocolate Pumpkin Pie

This healthy no-crust version is always a hit. Serve with lightly sweetened whipped cream or whipped coconut cream. For a regular pumpkin pie simply omit the cocoa powder and chocolate chips.

Wheat/gluten-free option: omit graham crackers or run a few wheat/gluten-free cookies through your food processor. This recipe also works fine without the graham crackers. If you’re limiting sugar artificial sweetener works well here.

Ingredients

  • 1 can (15oz) Pumpkin (not pie filling)
  • 1 can (12oz) Evaporated milk
  • 6 Egg whites
  • 1 tsp Vanilla
  • ¾ cup Brown sugar (lightly packed) or sweetener of choice
  • 3 Tbs Cocoa powder
  • 2 tsp Pumpkin pie spice
  • 1/8 tsp Salt
  • 1/2 cup reduced-fat graham cracker crumbs (about 3 whole crackers)
  • ½ cup mini chocolate chips (optional)

Instructions

  1. Spray a 9 inch pie plate with cooking spray. Preheat oven to 325°F.
  2. Mix all ingredients except for the graham crackers until well-blended.
  3. Stir in graham cracker crumbs and chocolate chips if using.
  4. Pour into pie plate and bake on middle rack for 50-55 minutes or until knife inserted into center comes out clean.

Gingerbread Coffee

A deliciously-scented afternoon pick-me-up. Add a splash of cream and touch of molasses to satisfy your sweet tooth when passing on dessert or craving some evening comfort.

Ingredients

  • 2 Tbs Cinnamon, ground
  • 1 Tbs Ginger, ground
  • 1 Tbs Cloves, ground
  • 1/2 Tbs Nutmeg, ground
  • 1/8 tsp Salt

Instructions

  1. Add spices and salt to a jar and shake well.
  2. Add about 1/2 teaspoon (or to taste) of the gingerbread mix to your regular or decaf coffee grounds before brewing.

Light Spaghetti Squash Apple "Pie"

Ingredients

  • 1 medium cooked spaghetti squash* (around 4 cups)
  • 2 medium apples, chopped or sliced**
  • 3 eggs (or 6 egg whites)
  • 1/2 cup brown sugar (or sweetener of choice)
  • 1 tsp vanilla
  • 1 tsp lemon juice
  • 1 Tbs cinnamon (or more to taste)
  • 1 tsp nutmeg
  • 1/3 cup raisins or cranberries

Instructions

  1. Preheat oven to 375ºF. Spray an 8x8" baking dish with cooking spray.
  2. Whisk eggs, brown sugar, vanilla and lemon juice. Chop cold cooked squash into rice-size pieces. Add chopped squash, apples, raisins, cinnamon and nutmeg to egg and sugar mixture. Mix well and pour into baking dish. and mix well.
  3. Bake on middle rack for 50-60 minutes or until golden brown on top.
  4. *Roasted squash is best but you can microwave it. Just be sure to squeeze out extra liquid.
  5. **I don’t peel my apples so chopping them small works well. If slicing they are best peeled.

Notes

(This is how to eat your veggies!) Shockingly amazing. The perfect sweet and healthy finish to a heavier meal. Serve plain as a simple but delightful afternoon or evening snack with a steaming cup of Gingerbread Coffee. Bump it up for company with ice cream or Greek yogurt, a drizzle of maple syrup and toasted walnuts.

Wheat-free, gluten-free, dairy-free, lower calorie and healthy source of fruit, vegetable and protein (for dessert!).
